Creamy Sweet Bell Pepper Dip

With summer in full swing and outdoor gatherings a big part of our weekend rituals, I thought it would be nice to share one of my favorite dips. Whether you are planning a picnic or doing some entertaining, it is fun and easy to bring a healthy, bright, and beautiful snack for family and friends to enjoy.

This recipe is super-easy to make and can be paired with just about anything. Add it to a crudité platter including sliced celery, carrots, bell peppers, radishes, tomatoes, and cucumbers. Packed with Vitamin C, antioxidants, and omega 3’s, this is the perfect snack for grown ups and kids. Keep it in your fridge and use it as a dip or as a salad dressing. You could even drizzle it in a whole wheat pita sandwich.

I love that it is dairy-free and made with all raw, fresh ingredients so all of the nutrients are intact.

Creamy Sweet Bell Pepper Dip

Makes about 2½ – 3½ Cups

1.5 sweet red bell peppers (You can mix sweet red, orange or yellow peppers)

½ cup walnuts

1 small clove garlic

1.5 Tbs. nutritional yeast

½ tsp. sea salt

2 tsp. lemon juice

Pinch of cayenne pepper

½ tsp. cumin

1 Tbs. olive oil

 

Blend or process all the ingredients together in a blender or food processor until smooth.
