I love this date dressing that makes green salads come alive with flavor.

During wintertime, it’s tough to crave salads, even though we all know greens give us the most nutritional benefits.

(For instance, did you know that cucumbers relieve joint pain, reduce cholesterol, promote digestion, weight loss and can help control blood pressure?)

So go ahead and make a delicious green salad with sliced cucumbers, shredded carrots, shredded red cabbage, and whatever veggies you have in your fridge, add some raw nuts, seeds, and even some goat cheese or broiled low-mercury fish on top. Delicious and clean.

Drizzle salad with this creamy date dressing. The dates naturally sweeten the dressing. I love how it has both sweet and savory tastes that will satisfy any cravings and will hopefully get you eating more greens this winter.

Plus, it has fresh ginger which is a warming spice that can help warm the body and make raw green vegetables more appealing in colder weather.

It’s so simple to make…enjoy!

 

Date Dressing

1/4 cup raw apple cider vinegar

6 tablespoons extra virgin olive oil

1/4 cup water

1 to 2 teaspoons fresh minced ginger

1 tablespoon Dijon mustard

2 to 3 Medjool dates, pitted

1/2 garlic clove, peeled

Sea salt and pepper to taste

 

Combine all of the ingredients in a blender and blend until completely smooth.

Taste and add another date if you desire more sweetness. Store in the fridge for up to a week in an airtight container.
