Gingerbread Balls

This is one of my family’s favorite treats. They are great to make in the fall and throughout the holidays, but truthfully they are good all year long.

This NO-BAKE recipe uses pecans (healthy fat) and organic pitted dates that give it it’s natural sweetness, and a mix of spices like cinnamon, ginger and nutmeg.

I love making these on a rainy afternoon or to have for guests during the holidays.

And best of all, they are so easy, because they involve no -baking, just making balls by rolling the sticky dough with your hands, which kids love to do.

Great as a dessert or snack.

NO refined flour or sugar and they taste AMAZING.

Gingerbread Balls
Makes 16 balls

1 1/2 cups pecans

1 cup medjool organic dates, pitted

1/8 teaspoon sea salt

1/2 teaspoon ground ginger

1 teaspoon ground cinnamon

1/4-1/2 teaspoon nutmeg (to taste)

2 tablespoons blackstrap molasses

3-4 tablespoons almond flour (start with three tablespoons, and add an extra if the dough is too sticky)

 

Place the pecans in a food processor and pulse a few times to break down.

Add remaining ingredients and process till the mixture is evenly mixed and sticks together when you squeeze a bit in your hand.

Shape into 1 inch balls. Keep balls in the fridge till ready to serve.
