Healthy Brownies

Posted · Add Comment

Looking for a healthy dessert to bring to a barbecue this weekend?

Look no further. These are so chewy and delicious, friends and family won’t even know they are gluten-free and refined sugar-free.

Made with almond butter and honey as the main ingredients, mixed with eggs, coco powder, and dark chocolate chunks, these are a crowd pleaser!

And very easy to make and mix together. No need for processed box mixes when you have a recipe like this.

Serve with some vanilla coconut milk ice cream.

Brownies
Makes about 24 brownies

1 (16 ounce) jar creamy roasted almond butter (I’ve also used organic sun butter for anyone with nut allergies, and it worked great)

2 eggs

1 ¼ cups honey

1 tablespoon vanilla extract

½ cup chocolate powder (unsweetened)

½ teaspoon sea salt

1 teaspoon baking soda

1 cup dark chocolate chunks

In a large bowl, blend almond butter until smooth with hand blender

Blend in eggs, then blend in honey and vanilla

Blend in chocolate powder, salt and baking soda, then fold in chocolate chips

Grease a 9×13 baking dish

Pour batter into dish

Bake at 325° for 25-40 minutes
(I found that 25-28 minutes gave me the perfect chewy brownie. Keep checking, as ovens vary. To test it, put a wooden toothpick in center and if there is no batter on it, then they’re done! Over-cooking will just give you a slightly drier brownie-and undercooking will make these super-chewy. Both ways are delicious)
