Sweet Potato Bread
Makes 2-4 servings
This is what healthy comfort food is all about. The root vegetables are grounding, warming and when paired with a fresh green salad, you get all the beneficial nutrients you need, in this one simple dish.
1-2 Sweet potatoes
(I like using yams, sweet potatoes or garnet japanese yams -which are purple on the outside and creamy white on the inside)
Simply slice the yams into ¼ inch slices the long way so they resemble slices of bread, drizzle about 2 tbsp. of coconut oil over the slices (or olive oil), and sprinkle either shredded coconut (for a sweeter bread) or dried herbs of your choice (like basil, rosemary, oregano or dill for a more savory bread) on top of your yam slices.
Place them in the oven on a parchment-lined baking sheet for about 20-30 minutes at 400 degrees. (check your oven for desired doneness). Serve with a green salad.
