This easy, clean avocado salad can be a side dish or a main meal.
Make an elegant and memorable salad by pairing buttery avocado and juicy, multicolored tomatoes.
A drizzle of olive oil, lemon and a sprinkling of salt and pepper is all the seasoning this salad needs.
Serve with grilled steak, chicken or fish for a delicious, healthy summer meal.
Tomato Avocado Salad
This classic cucumber and tomato salad just got better with the addition of avocado, lemon and fresh cilantro.
Serves 4 (as a side dish)
2-3 medium-large tomatoes, sliced or chopped (I like mixing up red and yellow tomatoes, but use whatever you have)
½ medium red onion, sliced or chopped
2 avocados, sliced or diced
2 Tbsp extra virgin olive oil
Juice of 1 medium lemon (about 2 Tbsp)
¼ cup (1/2 bunch) cilantro, chopped
1 tsp sea salt
⅛ tsp black pepper
Place chopped tomatoes, red onion, avocado, and cilantro into a large salad bowl.
Drizzle with 2 Tbsp olive oil and 2 Tbsp lemon juice. Toss gently to combine.
Just before serving, sprinkle with 1 tsp sea salt and ⅛ tsp black pepper.
*Note: if you aren’t keen on cilantro, fresh dill is a good substitute
You can also add crackers on the side for some extra crunch (I love the raw New York Natural Crackers or Mary’s Gone seed crackers).
OR add a piece of fish or poached egg on top.
You can also add a few of my favorite sun ripe black olives on top (or any kind of olive you love). Yum!!
