Besides drinking it as is, you can make a delicious, hydrating smoothie with coconut water, like this pink one, using:
• a splash of raw, beet juice (you can juice the beets yourself, or I often use some of the Blue Print juices available at Whole Foods)
• 2 cups coconut water
• a 1/2 of a cup raw coconut meat (this ingredient is optional, but so delicious if you have it. You get it by scraping the white meat from the inside of the coconut -or you can order from exoticsuperfoods.com)
• a splash of almond milk for creaminess
• a teaspoon of tahini (or almond butter)
• half of a frozen banana (optional)
Blend and serve. Adjust any of the ingredients to fit your tastes.
Sweet, alkaline and satisfying.
